Ingredients
  

Marinade Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice or lime juice
  • 2 tablespoons soy sauce or tamari
  • 2 teaspoons honey or brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Trim any weird bits from the chicken, then pat it dry. If it is very thick, lightly pound it to an even thickness.
  2. Combine all marinade ingredients in a bowl or jar and mix well.
  3. Add the chicken and marinade to a zip-top bag or container, ensuring the chicken is fully coated.
  4. Refrigerate for at least 30 minutes, ideally 2 to 6 hours, before grilling.
Grilling
  1. Preheat the grill to medium-high heat (400 to 450 F) with the lid closed for 10-15 minutes.
  2. Clean the grates and lightly oil them using a paper towel with oil held by tongs.
  3. Remove the chicken from the marinade, letting excess drip off, and grill over medium-high heat with the lid closed.
  4. Flip the chicken once when it releases easily and cook until the internal temperature reaches 165 F.
  5. Let the cooked chicken rest for 5 to 10 minutes before slicing.

Notes

For a flavorful variation, consider adding chipotle powder for a spicy kick or swapping herbs based on your preference. Avoid reusing raw marinade unless boiled first to eliminate bacteria. Ensure your grill is sufficiently preheated to prevent sticking.
