Ingredients
  

For the Chicken Marinade
  • 4 pieces Chicken thighs or breasts
  • 1/4 cup Olive oil For marinating
  • 2 tablespoons Fresh lemon juice Adds brightness to the flavor
  • 1/2 cup Greek yogurt For creaminess in the marinade
  • 4 cloves Garlic, minced For flavor
  • 1 teaspoon Dried oregano Classic Greek herb
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika For color and smokiness
  • 1/4 teaspoon Crushed red pepper flakes Optional for heat
For Serving
  • 4 pieces Pita bread Can use store-bought or homemade
  • 1 cup Lettuce, shredded For freshness
  • 1 medium Tomato, diced Adds juiciness
  • 1 small Onion, thinly sliced For sharpness
  • 1/2 cup Olives, sliced For a briny flavor
  • 1/2 cup Feta cheese, crumbled Optional but highly recommended
  • 1 cup Tzatziki sauce For the authentic Greek flavor

Method
 

Marinate the Chicken
  1. In a bowl, mix olive oil, lemon juice, Greek yogurt, garlic, oregano, salt, pepper, paprika, and crushed red pepper flakes.
  2. Add chicken to the marinade, ensuring it's coated well. Cover and marinate for at least 1 hour, preferably overnight.
Cook the Chicken
  1. Heat a skillet or grill over medium-high heat.
  2. Remove chicken from marinade and place in the hot pan. Sear each side until golden brown and cooked through, about 6-7 minutes per side.
  3. Remove chicken from heat and let it rest for a few minutes before slicing thinly.
Prepare Pitas
  1. In the same pan, warm the pita bread for about 30 seconds on each side until soft and pliable.
  2. Slice the warm pita open and fill it with sliced chicken.
  3. Top with lettuce, tomato, onion, olives, feta, and tzatziki sauce.
  4. Fold the pita and serve immediately.

Notes

For a quick meal, pre-purchase tzatziki and chopped vegetables. Leftover chicken is fantastic in lunch wraps or salads.
