Preparation
  1. Melt butter in a large pot over medium heat. Add chopped onion and cook until soft.
  2. Stir in minced garlic for the last 30 seconds to avoid burning.
  3. Sprinkle flour over the mixture and stir for about a minute to prevent a watery sauce.
Cooking
  1. Gradually add chicken broth while stirring to create a smooth mixture.
  2. Stir in milk or half-and-half and let the mixture simmer until it coats the back of a spoon.
  3. Add cooked chicken, carrots, peas, celery, and any optional vegetables.
  4. Once the mixture is simmering, add gnocchi and cook until tender, about 3-5 minutes.
