German Cherry Chocolate Cake

Ingredients
  

For the Cake Layers
  • 1 box Quality boxed chocolate cake mix Alternatively, you can bake from scratch.
  • 1 large Extra egg Add if using a boxed cake mix for a richer taste.
For the Cherry Filling
  • 1 can Canned sour cherries in light syrup Frozen cherries can be used as an alternative.
  • 1/4 cup Cherry syrup Use liquid from canned cherries or make with cherry juice and sugar.
For the Whipped Cream
  • 2 cups Heavy cream Alternatively, whipped topping can be used.
  • 1/4 cup Powdered sugar Adjust sweetness to taste.
  • 1 teaspoon Vanilla extract Enhances flavor.
For Garnishing
  • 1 bar Chocolate for shavings Use a vegetable peeler for curls.
  • 1-2 tablespoons Kirsch (optional) Traditional, but can be omitted.

Method
 

Preparation
  1. Bake and cool your cake layers completely.
  2. Stir together cherry syrup or juice with sugar to taste, adding kirsch if desired.
  3. In a cold bowl, whip heavy cream until it holds its shape and lightly sweeten.
Assembly
  1. Place the first cake layer on a serving plate, brush or spoon on cherry syrup, and add a thick layer of whipped cream.
  2. Scatter a layer of cherries over the cream.
  3. Repeat the process with the next layer, soaking, adding cream and cherries, and finish with the last layer.
  4. Cover the top and sides of the cake with whipped cream, and decorate with chocolate shavings and cherries.

Notes

Chill the assembled cake for at least 2-4 hours before serving to improve flavor and appearance. Store leftovers in the fridge for up to 3 days, or freeze layers for up to 2 months.
