Ingredients
  

For the Chicken and Potatoes
  • 2 pounds boneless skinless chicken thighs You can also use boneless skinless breasts.
  • 4 cups potatoes, diced Cut potatoes evenly for even cooking.
For the Garlic Parmesan Sauce
  • 4 tablespoons butter Use unsalted for better control of seasoning.
  • 4 cloves garlic, minced Freshly minced garlic preferred.
  • 8 ounces cream cheese You can also use heavy cream.
  • 1 cup parmesan cheese, grated Freshly grated is best.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes Optional for a bit of heat.

Method
 

Preparation
  1. Prepare the slow cooker by placing the diced potatoes at the bottom.
  2. Layer the chicken thighs on top of the potatoes.
  3. In a saucepan, melt the butter and add the minced garlic, sautéing until fragrant.
  4. Add cream cheese, Parmesan cheese, salt, pepper, Italian seasoning, and red pepper flakes to the saucepan. Stir until the mixture is melted and smooth.
  5. Pour the garlic Parmesan sauce over the chicken and potatoes.
Cooking
  1. Cover the slow cooker and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  2. Check the chicken for doneness: it should be tender and cooked through.
Serving
  1. Once cooked, shred or slice the chicken and serve with the potatoes, ensuring to ladle some sauce over the top.
  2. Garnish with extra Parmesan and chopped parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You can freeze for up to 2 months. Reheat gently on the stovetop, adding a splash of broth if needed to loosen the sauce.
