  • 1 lb Boneless chicken thighs or breasts Use what you have available
  • 1.5 lbs Mini Yukon gold or red potatoes Chop if too big
  • 4 cloves Fresh garlic Can use pre-minced garlic if short on time
  • 1 cup Parmesan cheese Real deal or shaker can, according to preference
  • 3 tbsp Olive oil For coating the chicken
  • 2 tsp Paprika For flavor
  • 2 tsp Dried parsley For added flavor
  • 1 tsp Salt To taste
  • 1 tsp Black pepper To taste
  • 0.5 cup Chicken broth Optional, enhances flavor

Method
 

Preparation
  1. Lightly oil the chicken with olive oil and season with salt and pepper.
  2. Place the potatoes in the crockpot on top of the chicken.
  3. In a bowl, mix garlic, parmesan cheese, dried parsley, and paprika.
  4. Sprinkle the garlic and parmesan mixture over the chicken and potatoes.
  5. Add a splash of chicken broth, then cover the crockpot with the lid.
Cooking
  1. Cook on low for 6-7 hours or on high for 4 hours.
  2. Optional: Broil the chicken for a few minutes at the end for a crispier texture.
Serving
  1. Stir halfway through cooking if possible to ensure flavors are well combined.
  2. Serve hot and enjoy!

Notes

Feel free to substitute with other vegetables like carrots or butternut squash. Leftovers can be reheated in a skillet for crispy edges.
