Preparation
- Cut the steak into bite-sized cubes and pat them dry with paper towels.
- Season the steak well with salt and pepper. Let it sit for 10 minutes at room temperature if possible.
Cooking
- Heat a heavy skillet over medium-high heat and add olive oil.
- Once the oil is shimmery, add the steak in a single layer. Sear for 1 to 2 minutes on one side without moving it. Flip and brown the other side, cooking for a total of 3 to 6 minutes for medium rare to medium.
- Remove the cooked steak from the skillet and set aside on a plate.
- Reduce the heat to medium, add the butter, and let it melt. Once melted, add minced garlic and stir for about 20 to 30 seconds until fragrant.
- Return the steak to the pan and toss to coat in the garlic butter. Adjust salt and pepper to taste.
- Finish with chopped parsley, red pepper flakes, and a squeeze of lemon juice if desired.
Notes
Pat the steak dry for better browning. Avoid crowding the pan and cook in batches if needed. Let the steak rest briefly before serving for extra tenderness.
