Ingredients
  

For the marinade
  • 4 to 8 pieces lamb chops Rib chops or loin chops recommended.
  • 3 cloves garlic, smashed Smash garlic with a knife.
  • 2 tablespoons fresh rosemary, chopped Fresh is preferred, but dried can be used.
  • 1 piece lemon, zested Use just the yellow part.
  • 2 tablespoons olive oil Add more to taste.
  • to taste salt Essential for flavor.
  • to taste black pepper Essential for flavor.

Method
 

Preparation
  1. Smoosh all marinade ingredients together in a bowl.
  2. Rub the mixture onto the lamb chops.
  3. Let the chops marinate for at least 30 minutes, longer if possible.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Grill the lamb chops for three to four minutes per side for medium-rare.
  3. Flip only once to achieve a good crust.

Notes

Serve with grilled veggies, a big spring salad, or crispy potatoes. For added flavor, consider a herbed couscous or garlicky yogurt sauce. Wine pairing is optional but recommended.
