Preparation
- Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
- For the brownie layer, in a large bowl, mix together melted butter and sugar until combined.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- Sift together flour, cocoa powder, and salt, then fold into the wet mixture until just combined.
- Pour the brownie batter into the prepared baking pan and spread evenly.
- For the cookie layer, in another bowl, cream together softened butter, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt before folding into the wet ingredients.
- Drop spoonfuls of the cookie dough over the brownie layer, spreading gently.
Baking
- Bake in the preheated oven for about 25 minutes, or until the top looks set and a toothpick comes out with moist crumbs.
Cooling & Serving
- Let cool completely in the baking pan before lifting out using the parchment paper to cut into squares.
- Serve warm with vanilla ice cream or drizzle with chocolate syrup if desired.
Notes
Store in an airtight container for up to 3 days. They can also be refrigerated to prolong freshness.
