Preparation
- Warm a skillet over medium heat. A cast iron skillet is ideal for great browning.
- Cut two small slits near the edge of each bologna slice to prevent curling.
Cooking
- Melt half the butter in the pan and add the bologna in a single layer.
- Cook for 2 to 3 minutes until golden and crisp at the edges, then flip and cook for another 1 to 2 minutes.
- Push the bologna to the side and add the rest of the butter. Lay in both bread slices to lightly toast in the butter.
- Place the cheese on one of the bread slices to melt while the bread toasts.
- Stack the hot bologna on the cheesy slice, add mustard and any extras, and top with the second slice of bread.
- Press gently with a spatula for 15 seconds to help it meld together.
Notes
For the best flavor, allow the bologna to brown fully and don’t rush the cooking process. You can also cook onions in the skillet for added flavor. Various cheeses can be used based on preference.
