  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

  • 0.5 cups unsalted butter, softened
  • 0.5 cups brown sugar
  • 0.25 cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup finely chopped apple (about 1 medium apple) peeled or unpeeled, your choice
  • 0.5 cups chopped walnuts or pecans optional
  • 0.33 cups raisins optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, stir together the oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix the softened butter with the brown sugar and white sugar until creamy.
  4. Add the egg and vanilla extract to the butter mixture and mix until smooth.
  5. Stir the dry ingredients into the wet ingredients until combined, resembling classic oatmeal dough.
  6. Fold in the chopped apple and any optional add-ins like nuts or raisins.
Baking
  1. Scoop tablespoon-sized mounds of dough onto the prepared baking sheet.
  2. Bake for about 10 to 12 minutes until the edges are set and the centers are slightly soft.
  3. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
