French Toast Casserole

Ingredients
  

For the casserole
  • 8 large eggs Use large eggs for best results.
  • 4 cups milk Can use whole milk, or substitute with half and half for a richer flavor.
  • 1 cup heavy cream Or replace with more milk if desired.
  • 3/4 cup sugar Brown sugar can be used for a warmer flavor.
  • 2 teaspoons vanilla extract For flavor.
  • 2 teaspoons ground cinnamon Add a pinch of nutmeg if desired.
  • 1 pinch salt Enhances sweetness.
  • 1 loaf bread Use brioche or challah for best results, cut into 1-inch cubes.

Method
 

Preparation
  1. Grease a 9 by 13 inch baking dish with butter.
  2. Cut the bread into 1-inch cubes and spread evenly in the dish. If very fresh, let cubes sit out for 30 to 60 minutes to dry a bit.
  3. In a large bowl, whisk together the eggs, milk, cream, sugar, vanilla, cinnamon, and salt.
  4. Pour the mixture over the bread and gently press down with a spoon to soak the bread.
  5. Cover and refrigerate overnight, or for at least 6 hours.
Baking
  1. In the morning, let the dish sit at room temperature while preheating the oven to 350°F (175°C).
  2. Bake for 35 to 45 minutes until the top is golden and the center is set.
  3. Rest for 10 minutes before slicing and serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Optionally reheat in the microwave or oven. For freezing, slice and wrap well before freezing for up to 2 months.
