Preparation
- Preheat oven to 375 F (190 C).
- Lightly grease a baking dish.
- Season the chicken on both sides with salt and pepper and lay in the dish.
Cooking the Onions
- Thinly slice the onions and cook in a skillet with butter or oil over medium heat.
- Stir often until the onions turn soft and golden brown (about 20-30 minutes).
- Add garlic if using, then pour in the broth and Worcestershire sauce.
- Sprinkle with thyme and let simmer for a few minutes.
Baking
- Spoon the onion mixture over the chicken.
- Cover the dish with foil and bake for about 25 minutes.
- Remove foil, layer cheese on top, and bake uncovered for another 10-15 minutes.
- Broil for 1-2 minutes if you desire a golden top.
Notes
Avoid rushing the onion cooking process for better flavor. Use similarly sized chicken pieces for even cooking. Make sure to choose a cheese that melts well.
