French Onion Chicken Bake

  • 4 pieces Boneless chicken breasts or thighs Thighs stay juicy; either works.
  • 2-3 large Yellow onions Sweet onions work best.
  • 2 tablespoons Butter or olive oil For cooking the onions.
  • 2 cloves Garlic (optional) Adds extra flavor.
  • 1 cup Beef broth Chicken broth can be used as a substitute.
  • 1 tablespoon Worcestershire sauce For that classic onion soup flavor.
  • 1 teaspoon Thyme (dried or fresh) Adds herbal notes.
  • Salt to taste Salt For seasoning.
  • Pepper to taste Pepper For seasoning.
  • 8 ounces Swiss cheese, provolone, or gruyere Choose any melty cheese.
  • 1 handful Shredded mozzarella (optional) For extra cheesy stretch.

Method
 

Preparation
  1. Preheat oven to 375 F (190 C).
  2. Lightly grease a baking dish.
  3. Season the chicken on both sides with salt and pepper and lay in the dish.
Cooking the Onions
  1. Thinly slice the onions and cook in a skillet with butter or oil over medium heat.
  2. Stir often until the onions turn soft and golden brown (about 20-30 minutes).
  3. Add garlic if using, then pour in the broth and Worcestershire sauce.
  4. Sprinkle with thyme and let simmer for a few minutes.
Baking
  1. Spoon the onion mixture over the chicken.
  2. Cover the dish with foil and bake for about 25 minutes.
  3. Remove foil, layer cheese on top, and bake uncovered for another 10-15 minutes.
  4. Broil for 1-2 minutes if you desire a golden top.

Notes

Avoid rushing the onion cooking process for better flavor. Use similarly sized chicken pieces for even cooking. Make sure to choose a cheese that melts well.
