  • 1-2 teaspoons Dijon mustard Adjust depending on how bold you want the flavor
  • 1 tablespoon Fresh lemon juice or white wine vinegar
  • 2 tablespoons Olive oil
  • 1/4 teaspoon Salt Start with this amount, adjust later
  • Black pepper To taste
  • 1 teaspoon Honey or sugar Optional, if carrots are not very sweet
  • Chopped parsley or chives Optional for garnish
  • 1 small clove Garlic, finely grated Optional for a stronger flavor

Method
 

Preparation
  1. Grate the carrots using a box grater or a food processor.
  2. In a bowl, mix the Dijon mustard, lemon juice or vinegar, olive oil, salt, and pepper until smooth and creamy.
  3. Add the grated carrots to the dressing and mix until every shred is lightly coated.
  4. Taste and adjust the seasoning; add more salt, lemon, or honey to balance the flavors.
  5. Let the salad rest for 10 to 15 minutes to enhance the flavors.

Notes

If using older carrots, let them sit longer after mixing for best results. The salad can be made ahead and tastes better after a short rest.
