Preparation
- Drain the mandarin oranges and pineapple in a colander, let sit for a few minutes.
- In a mixing bowl, combine drained fruit, shredded coconut, mini marshmallows, and whipped topping.
- If desired, add sour cream and/or nuts. Gently fold until ingredients are well mixed.
- Cover and chill in the fridge for at least 2 hours, preferably overnight.
Serving
- Before serving, sprinkle extra coconut on top or add a few orange slices for decoration.
Notes
Chill long enough for best flavors. Drain fruits well to prevent a watery salad. For a lighter version, use light whipped topping and Greek yogurt.
