An easy, no-bake Ambrosia Salad that combines fruit, cream, and marshmallows, perfect for potlucks and family gatherings.

Ingredients
  

Fruit Ingredients
  • 1 can mandarin oranges Well-drained
  • 1 can pineapple chunks Well-drained
Topping Ingredients
  • 1 cup shredded coconut Optional, can skip if not liked
  • 1 cup mini marshmallows
  • 1 container whipped topping Can substitute with homemade whipped cream
Optional Ingredients
  • 1/2 cup sour cream Adds tanginess
  • 1/2 cup chopped pecans or walnuts Add right before serving for crunch

Method
 

Preparation
  1. Drain the mandarin oranges and pineapple in a colander, let sit for a few minutes.
  2. In a mixing bowl, combine drained fruit, shredded coconut, mini marshmallows, and whipped topping.
  3. If desired, add sour cream and/or nuts. Gently fold until ingredients are well mixed.
  4. Cover and chill in the fridge for at least 2 hours, preferably overnight.
Serving
  1. Before serving, sprinkle extra coconut on top or add a few orange slices for decoration.

Notes

Chill long enough for best flavors. Drain fruits well to prevent a watery salad. For a lighter version, use light whipped topping and Greek yogurt.
