Ingredients
  

Main ingredients
  • 1 lb boneless chicken breasts or thighs Can be chopped into chunky strips
  • 2 cups bell peppers Use a mix of colors for variety
  • 1 large onion Chopped
  • 2 cloves garlic Fresh, minced (optional)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp salt To taste
  • 1 tsp pepper To taste
  • 2 tbsp olive oil For drizzling
  • 1 tbsp lime juice For added brightness
  • 2 cups shredded cheese Cheddar or Monterey Jack, plus extra for topping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chicken, bell peppers, onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Drizzle with olive oil and lime juice, then mix well to combine.
  4. Fold in the shredded cheese, reserving some for topping.
Baking
  1. Spread the chicken mixture in a baking dish and cover with foil.
  2. Bake for 25 minutes.
  3. Remove the foil, sprinkle with reserved cheese, and bake for an additional 10 minutes until golden brown.

Notes

You can add black beans, corn, or any leftover veggies you have on hand. Can also use turkey or tofu instead of chicken.
