Ingredients

Dough Ingredients
  • 4 cups Bread flour All-purpose flour works, but bread flour is better for texture.
  • 1.5 cups Warm water Should be warm like bath water, not hot.
  • 2 teaspoons Instant yeast Active dry yeast is fine too; it just needs a longer wake-up.
  • 1 tablespoon Sugar or honey Used to help the yeast and for flavor.
  • 2 teaspoons Salt
Boiling Ingredients
  • 10 cups Water For boiling the bagels.
  • 1 tablespoon Honey or barley malt syrup Optional, for added flavor during boiling.
Topping Ingredients
  • 1 cup Everything bagel seasoning Store-bought or homemade.

Method

Mixing the Dough
  1. In a bowl, mix warm water, yeast, and sugar. Let it sit for a minute or two.
  2. Stir in flour and salt until it looks shaggy, then knead until smooth and springy, about 8 to 10 minutes by hand.
  3. Cover the dough and let it rise until puffy, about 60 to 90 minutes.
Shaping Bagels
  1. Cut the dough into 8 pieces for normal bagels, or 10 for slightly smaller ones.
  2. Shape each piece into a ball, and then poke a hole in the center to form the bagel.
  3. Let them rest for about 10 to 20 minutes while boiling the water.
Boiling and Baking
  1. Bring a wide pot of water to a gentle boil. Add honey or barley malt syrup.
  2. Boil each bagel for 30 to 60 seconds on each side.
  3. Let them drip for a moment, then place on a parchment lined pan while still tacky.
  4. Sprinkle with everything bagel seasoning before baking.
  5. Bake the bagels in a preheated oven at 425°F (220°C) until deep golden, about 20 to 25 minutes.

Notes

If you want a fresh drink while the dough rises, try homemade lemonade to enhance the weekend vibe. Bagels can be stored for up to 2 days at room temperature, or sliced and frozen for later use.
