Base Ingredients
  • 2 cups whole milk Or use half milk and half half and half for extra richness.
  • 4 to 5 ounces good dark chocolate, chopped Around 60 to 70 percent chocolate recommended.
  • 1 tablespoon unsweetened cocoa powder Optional, but deepens the flavor.
  • 1 to 2 tablespoons sugar or honey Optional, adjust to taste.
  • 1 pinch salt
  • 1 teaspoon vanilla extract Add at the end.

Method
 

Preparation
  1. Add the milk to a small saucepan and warm it over medium low heat until steaming, not boiling.
  2. Whisk in the chopped chocolate slowly, a handful at a time, until it melts and the mixture looks glossy.
  3. If using cocoa powder, whisk it in now so it dissolves smoothly. Add the pinch of salt.
  4. Continue whisking for another 2 to 4 minutes until the mixture is thicker and more unified.
  5. Taste the mixture. If additional sweetness is desired, add a little sugar or honey and whisk again.
  6. Turn off the heat and stir in the vanilla extract. Pour into mugs and serve immediately.

Notes

Warm ingredients gently and whisk vigorously to achieve the best texture. High heat can scorch milk and change the flavor.
