Easy Yuzu Cheesecake

Ingredients
  

For the cheesecake filling
  • 16 oz Cream cheese, softened Full fat is best for setting properly.
  • 1/2 cup Yuzu juice Bottled yuzu juice works great. Substitute with lemon juice and a tiny bit of grapefruit if yuzu is unavailable.
  • 1 cup Heavy cream This helps the filling set and feel airy.
  • 1/2 cup Powdered sugar Dissolves easily for a silky filling.
  • 1 tsp Vanilla extract Optional, rounds out the citrus flavor.
For the crust
  • 1.5 cups Crushed graham crackers or digestive biscuits Can substitute with vanilla wafers for a different flavor.
  • 1/2 cup Melted butter Add more if the crumbs look too dry.
  • a pinch Salt Optional, adds depth of flavor.

Method
 

Prepare the crust
  1. Crush the cookies or crackers into fine crumbs using a zip-top bag and a rolling pin.
  2. Mix the crumbs with melted butter and a tiny pinch of salt. If the mixture looks too dry, add more butter, one spoonful at a time.
  3. Press the mixture into your pan using the bottom of a cup to pack it down firmly.
  4. Chill the crust for 10-15 minutes while preparing the filling.
Prepare the filling
  1. Blend the softened cream cheese with powdered sugar and yuzu juice to achieve a smooth texture.
  2. Whip the heavy cream to soft peaks in a separate bowl.
  3. Fold the whipped cream gently into the cream cheese mixture until combined.
  4. Pour the filling into the chilled crust, smooth the top, and chill until set, preferably overnight.

Notes

This cheesecake tastes best when made ahead of time and chilled overnight. If using a springform pan, line the bottom with parchment paper for easy removal. Serve with fresh berries, whipped cream, citrus slices, toasted coconut, or white chocolate curls for variations.
