  • 2-2.5 pounds chicken wings, split or party wings
  • 1 tablespoon baking powder for extra crisp skin
  • 1-1.5 teaspoons kosher salt
  • 1.5-2 tablespoons lemon pepper seasoning, plus more to finish
  • 4 tablespoons butter, melted
  • 1-2 teaspoons lemon juice optional but nice

Preparation
  1. Pat the wings dry using paper towels. Moisture is the enemy of crispiness.
  2. Toss wings with baking powder, salt, and a little lemon pepper. Spread them out on a wire rack over a sheet pan to avoid steaming.
Cooking
  1. Bake at 425°F (220°C) for 40 to 50 minutes, flipping once halfway. Adjust time for larger wings.
  2. While the wings bake, melt butter and stir in lemon pepper seasoning, adding lemon juice if desired.
  3. Toss hot wings in the lemon pepper butter to ensure coverage and sprinkle additional lemon pepper on top.

Notes

Wings are best enjoyed fresh from the oven but can be stored in the fridge for 3-4 days or frozen. For reheating, use an oven or air fryer to retain crispiness.
