Main Ingredients
  • 1 can white beans (cannellini or great northern), drained and rinsed
  • 1-2 cloves garlic Start with 1 if you are garlic shy
  • 2-3 tablespoons olive oil, plus more for topping
  • 1-2 tablespoons lemon juice (fresh tastes best)
  • 2-3 tablespoons water To thin it out
  • 1 teaspoon dried Italian herbs or a mix of parsley, basil, and oregano
  • 1-2 tablespoons chopped fresh herbs (optional)
  • 1/2 teaspoon salt, plus more to taste
  • to taste pinch black pepper
  • optional pinch of red pepper flakes, a little grated Parmesan, or a spoon of Greek yogurt

Method
 

Preparation
  1. Add rinsed beans, garlic, lemon juice, olive oil, herbs, salt, and pepper to your food processor.
  2. Blend for about 30 seconds, scrape down the sides, then blend again.
  3. Add water a tablespoon at a time until it is smooth and scoopable.
  4. Taste it. Add more salt, lemon, herbs, or garlic if needed.
  5. Spoon into a bowl and top with a drizzle of olive oil, pepper, and a little chopped herb confetti.

Notes

For a richer texture, add Greek yogurt or Parmesan. Store in an airtight container in the fridge for 4-5 days. It thickens in the fridge; stir and add a splash of water or olive oil to loosen it up.
