  • 1 large seedless watermelon Look for one that feels heavy for its size.
  • 1 to 2 cups whipped topping Homemade whipped cream or a dairy-free option.
  • assorted various fresh fruit for decorating Strawberries, blueberries, kiwi, raspberries, grapes, blackberries.
Optional Extras
  • 1 cup shredded coconut For added texture.
  • 1 cup sliced almonds Add for crunch.
  • 1/2 cup mini chocolate chips For those who enjoy chocolate.
  • a few leaves mint leaves For garnish.

Method
 

Preparation
  1. Slice a thin piece off the bottom of the watermelon so it sits flat. Then slice off the top to create a flat surface.
  2. Stand the watermelon upright and cut the rind off in strips, following the curve to form a smooth 'cake' cylinder.
  3. Pat the outside of the watermelon dry with paper towels to help the topping stick.
Decoration
  1. Spread whipped topping all over the outside of the watermelon and a bit on top.
  2. Press fresh fruit into the topping and pile a little fruit on top like a crown.
  3. Chill in the fridge for 30 minutes before slicing.

Notes

Keep the cake cold right up until serving as watermelon starts to sweat. For best results, decorate closer to serving time.
