Ingredients
  

Main Ingredients
  • 4 cups Watermelon, cold and cubed Seedless makes life easier.
  • 4 cups Arugula, fresh and dry Wet greens can water down the bowl.
  • 1 cup Feta, crumbled or chunked Block feta is creamier than pre-crumbled.
  • 1/4 cup Mint, torn or thinly sliced Add more if you love mint.
  • 2 tablespoons Olive oil Use a quick splash.
  • 1 tablespoon Fresh lime juice or lemon juice Adjust to taste.
  • to taste Salt and black pepper Taste to adjust seasoning.
Optional Additions
  • 1 cup Sliced cucumber For extra hydration.
  • 1/4 cup Thin red onion For a savory bite.
  • to taste Balsamic glaze For sweet tangy finish.

Method
 

Preparation
  1. Cube cold watermelon and pat off extra moisture with a paper towel if it is super juicy.
  2. Add arugula to a big bowl. Drizzle a little olive oil and a squeeze of citrus, then toss gently.
  3. Scatter watermelon over the greens.
  4. Add crumbled feta and torn mint on top.
  5. Finish with black pepper and a tiny pinch of salt if needed.
  6. Taste, then add another squeeze of lime or lemon if it needs a lift.

Notes

Chill your watermelon ahead of time for a crisp salad. Use light dressing as watermelon releases juice over time. Add feta at the end to keep it creamy.
