- Cube cold watermelon and pat off extra moisture with a paper towel if it is super juicy.
- Add arugula to a big bowl. Drizzle a little olive oil and a squeeze of citrus, then toss gently.
- Scatter watermelon over the greens.
- Add crumbled feta and torn mint on top.
- Finish with black pepper and a tiny pinch of salt if needed.
- Taste, then add another squeeze of lime or lemon if it needs a lift.
Notes
Chill your watermelon ahead of time for a crisp salad. Use light dressing as watermelon releases juice over time. Add feta at the end to keep it creamy.
