  • 1.5 cups frozen pineapple chunks Fresh works too, but frozen makes it thick
  • 0.5 cups pineapple juice Add more if you like it looser
  • 0.5 cups coconut milk Full fat gives the creamiest result
  • 1-2 tablespoons coconut cream Optional, for extra richness
  • 1-1.5 cups ice Depending on blender strength
  • 1-2 teaspoons honey, sugar, or simple syrup Optional, if the pineapple is not very sweet
  • 1 squeeze lime juice Optional, to brighten it up

Method
 

Preparation
  1. Add frozen pineapple, pineapple juice, and coconut milk to your blender.
  2. Add ice and blend until smooth. Stop once or twice to scrape the sides if needed.
  3. Taste it. If it needs a little sweetness, add your sweetener. If it feels too sweet or heavy, add a tiny squeeze of lime.
  4. Blend again for 5 to 10 seconds. Pour into glasses and serve right away.

Notes

For a thicker consistency, use frozen pineapple. For a creamier texture, opt for canned coconut milk. Avoid overdoing the ice to prevent a bland texture. Letting the drink rest for 30 seconds after blending helps enhance the smoothness. Can be prepared ahead by blending all ingredients except ice and freezing in cubes.
