Preparation
- Cream the butter and both sugars in a bowl until fluffy and lighter.
- Mix in the egg, vanilla, ube extract, and ube halaya if using. The batter will look purple and smell amazing.
- In a separate bowl, stir together flour, baking powder, baking soda, and salt.
- Add the dry mix into the wet mix and stir just until you don’t see dry flour anymore. Don’t overmix.
- Cover and chill the dough for at least 30 minutes, or up to overnight.
Baking
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Scoop dough into balls, about 1 to 1.5 tablespoons each.
- Roll each dough ball in granulated sugar, then roll in powdered sugar.
- Bake for about 10 to 12 minutes. They should look set but still soft in the middle.
- Cool on the pan for a few minutes, then transfer to a rack.
