Preparation
- Heat a large skillet over medium heat.
- Add the chicken and brown it on both sides.
- Remove chicken and set aside.
Cooking Sauce
- In the same skillet, add garlic and cook until fragrant.
- Add sun-dried tomatoes and herbs to the skillet.
- Pour in cream and stir until combined.
- Return the chicken to the skillet and add the beans.
- Simmer until the chicken is cooked through and the sauce thickens.
- Stir in spinach until just wilted.
Notes
Leftovers can be stored in airtight containers in the fridge for up to 3-4 days or frozen for 2-3 months. When reheating, add a splash of broth if the sauce thickens.
