Ingredients
  

Chicken and Beans
  • 1 lb chicken breast or thighs Use whichever fits your goals.
  • 1 can cannellini beans Rinsed and drained.
Vegetables and Aromatics
  • 2 cloves garlic Minced.
  • 1 cup fresh spinach Added at the end until wilted.
  • 1/2 cup sun-dried tomatoes Packed in oil for extra flavor.
Herbs and Seasoning
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 cup cream or half and half Use less for a lighter version.

Method
 

Preparation
  1. Heat a large skillet over medium heat.
  2. Add the chicken and brown it on both sides.
  3. Remove chicken and set aside.
Cooking Sauce
  1. In the same skillet, add garlic and cook until fragrant.
  2. Add sun-dried tomatoes and herbs to the skillet.
  3. Pour in cream and stir until combined.
  4. Return the chicken to the skillet and add the beans.
  5. Simmer until the chicken is cooked through and the sauce thickens.
  6. Stir in spinach until just wilted.

Notes

Leftovers can be stored in airtight containers in the fridge for up to 3-4 days or frozen for 2-3 months. When reheating, add a splash of broth if the sauce thickens.
