Method
Cooking Pasta
- Boil your pasta in well-salted water until al dente. Before draining, reserve about 1 cup of pasta water.
Cooking Mushrooms
- In a wide pan, heat a mix of butter and olive oil over medium-high heat. Cook the mushrooms until golden brown, allowing them to sit for a few minutes before stirring to prevent steaming.
Adding Flavors
- Once mushrooms are golden, add garlic and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
- Pour in the heavy cream and lower the heat. Let it gently bubble for a few minutes until it thickens slightly.
- Gradually stir in the Parmesan cheese until the sauce is smooth.
Combining Pasta and Sauce
- Toss the cooked pasta in the sauce. If it's too thick, add a splash of reserved pasta water. If too thin, allow it to simmer for another minute.
Finishing Touch
- Off the heat, drizzle in truffle oil, taste, and adjust if necessary.
Notes
For a restaurant feel, grind fresh black pepper over the top before serving. This dish can be enhanced with protein, greens, or different toppings as desired. Leftovers reheat well with a bit of added cream or milk.
