Preparation
- Boil the pasta in salted water 1 to 2 minutes shy of being done, then drain and set aside.
- In a pot, melt butter, then stir in flour for about a minute.
- Slowly pour in the milk while whisking continuously until you have a smooth sauce.
- Lower the heat and add cheese a handful at a time, stirring to melt.
- Season with salt and pepper to taste.
- Stir in the cooked pasta, pour the mixture into a buttered baking dish, and add more cheese on top.
Baking
- Bake in the oven at 350°F for 20 to 25 minutes until hot and bubbly.
- Broil for an additional 1 to 2 minutes for a crispier top, but watch closely.
- Let the dish rest for 10 minutes before serving.
Notes
Grate your own cheese for a better melt. Undercook pasta slightly to prevent it from becoming mushy.
