Preparation
- Bring a large pot of salted water to a boil. Add the trimmed green beans and cook until bright green and just tender, about 4 to 6 minutes. Drain and rinse quickly with cool water.
Sauce Preparation
- In a large skillet, melt the butter over medium heat. Add the onion and cook until soft.
- Add the mushrooms and cook until they release liquid and start to brown.
- Sprinkle the flour over the mixture and stir for about a minute. Gradually pour in the milk while stirring and let it bubble gently until it thickens.
- Season the sauce with salt, black pepper, and soy sauce or Worcestershire.
Assembly
- Add the cooked green beans to the sauce and stir to coat. Pour the mixture into a baking dish and top with French fried onions.
Baking
- Bake in a preheated oven at 350°F (175°C) until hot and bubbly, about 20 to 25 minutes. For extra crispy onions, reserve some to add in the last 5 minutes of baking.
Notes
You can prepare this casserole in advance by assembling it (without the onions) and refrigerating it. Bake covered for the first 15 minutes before adding onions on top.
