- Brown the ground chicken in a skillet with a little oil over medium heat, breaking it up into small crumbles.
- When the chicken is mostly cooked, add the chopped onion (or shallot) and cook until soft, about 2 to 3 minutes.
- Add the garlic and ginger, stirring for about 30 seconds until fragrant.
- Pour in the soy sauce mixture and let it bubble gently for a couple of minutes until glossy.
- Turn off the heat and stir in the lime juice and chopped herbs if desired.
- Spoon the mixture into lettuce leaves and top with crunchy ingredients like shredded carrots, cucumbers, and peanuts.
Notes
Store chicken filling in an airtight container for up to 4 days. Keep lettuce and toppings separate. Warm filling before serving. Can freeze filling for up to 2 months.
