Ingredients
  

For the Filling
  • 1 lb Ground chicken Lean and quick. Ground turkey works too.
  • 1 medium Onion or shallot Shallot for a more Thai flavor, onion is also fine.
  • 2 cloves Garlic Fresh is ideal but jar works in a pinch.
  • 1 tbsp Fresh ginger Fresh is best, but jar also works.
  • 1/4 cup Soy sauce Use low sodium if possible, tamari is a gluten-free option.
  • 2 tbsp Sweetener Brown sugar, honey, or maple syrup.
  • 1 tbsp Lime juice Adds brightness to the dish.
  • 1 tbsp Sesame oil Optional for a toasty flavor.
  • 1 tsp Chili (optional) Sriracha, chili flakes, or chopped chili for heat.
For the Toppings
  • 1 cup Shredded carrots Adds crunch and freshness.
  • 1 cup Cucumbers Chopped or sliced for freshness.
  • 1/4 cup Chopped cilantro A fresh herb to complement the dish.
  • 1/4 cup Chopped mint Optional for added freshness.
  • 1/4 cup Chopped green onions Provides mild onion flavor.
  • 1/4 cup Chopped peanuts Adds crunch and a nutty flavor.
For the Lettuce
  • 1 head Butter lettuce Preferred for flexibility. Other varieties can be used.

Method
 

Preparation
  1. Brown the ground chicken in a skillet with a little oil over medium heat, breaking it up into small crumbles.
  2. When the chicken is mostly cooked, add the chopped onion (or shallot) and cook until soft, about 2 to 3 minutes.
  3. Add the garlic and ginger, stirring for about 30 seconds until fragrant.
  4. Pour in the soy sauce mixture and let it bubble gently for a couple of minutes until glossy.
  5. Turn off the heat and stir in the lime juice and chopped herbs if desired.
  6. Spoon the mixture into lettuce leaves and top with crunchy ingredients like shredded carrots, cucumbers, and peanuts.

Notes

Store chicken filling in an airtight container for up to 4 days. Keep lettuce and toppings separate. Warm filling before serving. Can freeze filling for up to 2 months.
