Ingredients
  

Main Ingredients
  • 1 to 1.25 pounds boneless chicken thighs or breasts Thighs stay juicier than breasts.
  • 1 tablespoon oil (any neutral oil works)
  • cooked rice white rice, brown rice, or sushi rice Day-old rice is preferred for better texture.
Optional Toppings
  • sliced green onions
  • sesame seeds
  • cucumber
  • shredded carrots
  • steamed broccoli
  • edamame

Method
 

Cooking the Chicken
  1. Pat the chicken dry and season lightly with salt and pepper.
  2. Heat a skillet on medium high and add the oil.
  3. Place the chicken in and let it cook without moving it too much until it has nice color.
  4. Flip and cook until it is fully cooked, typically giving thighs a few extra minutes.
  5. Reduce the heat to medium and pour in your teriyaki sauce, letting it bubble and thicken while coating the chicken.
  6. Slice the chicken and spoon extra sauce over the top.
Building the Bowl
  1. Start with a base of rice in the bowl.
  2. Finish with sesame seeds and green onions.
  3. Drizzle sriracha for added heat if desired.

Notes

Keep the heat moderate when adding sauce to avoid burning. Slice chicken after resting to retain juiciness.
