Easy Taco Soup

Ingredients
  

Main Ingredients
  • 1 lb ground beef (or turkey) Can substitute shredded rotisserie chicken.
  • 1 cup chopped onion Optional, use if available.
  • 1 can black beans Rinsed and drained.
  • 1 can pinto beans Rinsed and drained.
  • 1 can diced tomatoes Rotel for added heat, optional.
  • 1 cup beef broth Chicken broth or water can be used as well.
  • 1 tbsp taco seasoning Use packet or homemade mix.
Toppings
  • 1 cup tortilla chips For crunch.
  • 1 cup shredded cheese Cheddar, pepper jack, or Mexican blend.
  • 1 cup sour cream Or plain Greek yogurt.
  • 1 lime lime wedges For brightness.
  • 1 cup chopped cilantro For garnish.

Method
 

Preparation
  1. In a large pot or Dutch oven, brown the ground beef or turkey over medium heat.
  2. If using, add the chopped onion and cook until soft.
Cooking
  1. Add the black beans, pinto beans, diced tomatoes, beef broth, and taco seasoning to the pot.
  2. Bring to a simmer and cook for 15 to 25 minutes.
  3. Taste and adjust seasoning as necessary.
Serving
  1. Serve hot with your favorite toppings.

Notes

This soup tastes even better the next day. Adjust thickness by simmering uncovered or adding broth as needed. Freezes well for up to 3 months. Reheat gently if dairy is added.
