Preparation
- In a large pot or Dutch oven, brown the ground beef or turkey over medium heat.
- If using, add the chopped onion and cook until soft.
Cooking
- Add the black beans, pinto beans, diced tomatoes, beef broth, and taco seasoning to the pot.
- Bring to a simmer and cook for 15 to 25 minutes.
- Taste and adjust seasoning as necessary.

- Serve hot with your favorite toppings.
Notes
This soup tastes even better the next day. Adjust thickness by simmering uncovered or adding broth as needed. Freezes well for up to 3 months. Reheat gently if dairy is added.
