Easy Sweet Potato Gnocchi

Ingredients
  

Gnocchi Ingredients
  • 2 medium sweet potatoes about 1 and 1/2 cups mashed
  • 1 to 1.5 cups all purpose flour plus extra for dusting
  • 0.5 teaspoon salt
  • 1 egg yolk optional, but helps hold things together
  • 1 pinch nutmeg or cinnamon optional, but cozy

Method
 

Preparation
  1. Bake the sweet potatoes at 400°F until very soft, usually 45 to 60 minutes.
  2. Let them cool just enough to handle, then scoop out the flesh and mash until smooth.
  3. Mix the mashed sweet potato with salt and egg yolk if using on a counter or in a big bowl.
  4. Add flour a little at a time, stopping as soon as the dough comes together.
  5. Dust your counter and divide the dough into a few pieces.
  6. Roll each piece into a rope, about the thickness of your thumb, then cut into bite-size pillows.
  7. Optional: Press them gently with a fork for classic ridges.
Cooking
  1. Boil a big pot of salted water.
  2. Drop in gnocchi in batches. When they float, give them about 30 more seconds, then scoop them out.

Notes

Do not overflour the dough; add just enough flour so it holds together. A slightly sticky dough is normal. Use a gentle boil and finish in a pan with sauce for best texture. Serve right away.
