Preparation
- Bake the sweet potatoes at 400°F until very soft, usually 45 to 60 minutes.
- Let them cool just enough to handle, then scoop out the flesh and mash until smooth.
- Mix the mashed sweet potato with salt and egg yolk if using on a counter or in a big bowl.
- Add flour a little at a time, stopping as soon as the dough comes together.
- Dust your counter and divide the dough into a few pieces.
- Roll each piece into a rope, about the thickness of your thumb, then cut into bite-size pillows.
- Optional: Press them gently with a fork for classic ridges.
Cooking
- Boil a big pot of salted water.
- Drop in gnocchi in batches. When they float, give them about 30 more seconds, then scoop them out.
Notes
Do not overflour the dough; add just enough flour so it holds together. A slightly sticky dough is normal. Use a gentle boil and finish in a pan with sauce for best texture. Serve right away.
