Ingredients
  

For the cookies
  • 1 cup butter, softened Softened butter, not melted.
  • 1 cup granulated sugar Regular granulated sugar for the cookie.
  • 2 large eggs Add one at a time.
  • 1 teaspoon vanilla extract Use quality vanilla for best flavor.
  • 2 cups all-purpose flour Sprinkle in after creaming wet ingredients.
  • 1 teaspoon baking powder Gives lift and tenderness.
  • 1/2 teaspoon salt Enhances flavor.
For the frosting
  • 1/2 cup butter, softened Use softened for easy mixing.
  • 4 cups powdered sugar Sift if lumpy for a smooth frosting.
  • 1 teaspoon vanilla extract Enhances the flavor of the frosting.
  • 1 splash milk Add to achieve the desired spreadable consistency.
  • optional food coloring For tinting the frosting, if desired.

Method
 

Preparation
  1. Preheat the oven and prepare baking sheets.
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing until smooth. Stir in the vanilla.
  4. In a separate bowl, combine flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Scoop dough onto baking sheets with spacing in between.
Baking
  1. Bake until the edges are set and centers are slightly soft, about 8-10 minutes.
  2. Allow to cool on the tray for a few minutes, then transfer to a wire rack.
Frosting
  1. Beat the frosting ingredients together until creamy.
  2. Spread the frosting on cooled cookies and add sprinkles if desired.

Notes

Cookies stay soft for days. Store in an airtight container at room temperature for 3-4 days or freeze unfrosted cookies for later use.
