Salad Ingredients
  • 4 cups fresh baby spinach Tender, mild, and the perfect base.
  • 2 cups sliced strawberries Ripe and sweet.
  • 1/4 cup thinly sliced red onion Adjust for taste.
  • 1/2 cup crumbled feta or goat cheese Optional but highly recommended.
  • 1/4 cup sliced almonds, pecans, or walnuts Add for crunch.
Poppy Seed Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar (or white wine vinegar)
  • 1 tablespoon honey (or sugar)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon poppy seeds
  • to taste salt and pepper For seasoning.

Method
 

Preparation
  1. Make the dressing: In a small bowl or jar, whisk (or shake) together olive oil, vinegar, honey, Dijon, poppy seeds, and a pinch of salt and pepper. Taste and adjust if necessary.
  2. Prep the salad base: Add spinach to a big bowl. Top with sliced strawberries and thin slices of red onion.
  3. Add your toppings: Sprinkle on nuts and cheese. Optionally toast almonds lightly.
  4. Dress right before serving: Drizzle dressing over salad, toss gently, and serve immediately.

Notes

Keep spinach dry and slice strawberries right before serving. Soak onions in cold water for a milder taste. Dress the salad just before serving to prevent wilting.
