  • 1 box strawberry gelatin mix Use your favorite brand, regular or sugar-free.
  • 1 cup boiling water Hot enough to dissolve the gelatin completely.
  • 1 cup cold water Helps cool down the mixture.
  • 1 cup Cool Whip or whipped topping (thawed) Make sure it is thawed properly.
  • 1 cup cottage cheese (small curd) Adds creaminess to the fluff.
  • 1 cup crushed pineapple (drained) Drain well to prevent a runny mixture.
  • 1 cup mini marshmallows Adds fun bites to the salad.
Optional Ingredients
  • 1 cup sliced strawberries Add before serving for freshness.
  • 1/2 cup chopped pecans For crunch and texture.
  • 1/2 cup shredded coconut Optional for added flavor.

Method
 

Preparation
  1. In a medium bowl, stir the strawberry gelatin mix into boiling water until it is fully dissolved.
  2. Stir in the cold water and refrigerate until thickened, about 45-60 minutes.
  3. Once thickened, fold in the cottage cheese and drained crushed pineapple.
  4. Gently fold in the Cool Whip and mini marshmallows, taking care not to overmix.
  5. Cover and chill for at least 2 hours or overnight before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Stir gently before serving if it has sat overnight. Do not freeze, as texture will be compromised.
