Easy Stove Top Stuffing Chicken Casserole

Ingredients
  

For the creamy chicken layer
  • 4 cups Cooked chicken, shredded or chopped Rotisserie chicken works well
  • 1 can Cream of chicken soup
  • 1 cup Sour cream or plain Greek yogurt Greek yogurt can be used as a substitute
  • 0.5 cup Chicken broth More can be added for consistency
  • 1 cup Frozen mixed veggies or peas and carrots Optional for color and balance
  • to taste Salt and pepper Be cautious with salt due to the stuffing mix
For the stuffing topping
  • 1 box Stove Top stuffing mix Any flavor can be used
  • 1.5 cups Hot chicken broth Warm broth softens the stuffing quickly
Optional extras
  • 1 cup Shredded cheddar cheese For added richness
  • 1 teaspoon Garlic powder Optional for flavor
  • 2 tablespoons Chopped parsley For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (204°C) and lightly grease a 9 x 13 baking dish.
  2. In a large bowl, stir together the cooked chicken, cream of chicken soup, sour cream, and a splash of broth. If using, add the mixed veggies, and season with salt and pepper.
Making the stuffing
  1. In a separate bowl, combine the Stove Top stuffing mix with hot broth. Let it sit for a minute to soften.
Assembly and Baking
  1. Spread the chicken mixture into the prepared baking dish.
  2. Spoon the stuffing over the top and gently spread it out.
  3. Bake for about 20 minutes, or until hot and bubbling around the edges. For a golden topping, bake for an additional 3-5 minutes.
  4. Let it rest for 5 minutes before serving to allow it to set.

Notes

Use warm broth for quicker softening of stuffing. Do not add too much broth to keep the chicken layer creamy. For a crispier topping, broil for 1-2 minutes after baking.
