Preparation
- Pat the steak dry with paper towels to ensure a good sear.
- Season the steak generously with salt and pepper.
Cooking the Steak
- Heat a skillet over medium-high heat until it's ripping hot.
- Add the steak to the skillet and sear for a few minutes until browned.
- Flip the steak and sear the other side until cooked to your preference.
Making the Sauce
- Lower the heat and add butter to the skillet.
- Sauté minced garlic until fragrant.
- Pour in the heavy cream and whisk in the grated parmesan cheese, allowing it to bubble and thicken.
- For extra richness, spoon the sauce over the steak in the pan for a minute.
Notes
Pat steak dry for best sear. A cast iron pan is preferred. If the sauce looks thin initially, let it simmer to thicken. For easier cleanup, add a splash of water if the pan gets sticky. Doubling the sauce is often appreciated.
