Preparation
- In a large bowl, stir warm water, yeast, and sugar. Let it sit for about 5 minutes until foamy.

Rising
- Place the dough in a lightly greased bowl, cover it, and let it rise for about 45 to 60 minutes until doubled.
Shaping
- Once the dough has risen, punch it down gently. Roll it into long ropes and cut into bite-size pieces, around 1 inch.
Boiling
- Bring a pot of water to a simmer and add baking soda carefully.
- Drop pretzel bites in for about 20 to 30 seconds, then lift out with a slotted spoon and place on a parchment lined baking sheet.
Baking
- Brush with egg wash (if using), sprinkle with coarse salt, and bake at 425°F until deep golden brown, usually 10 to 14 minutes.
- Brush generously with melted butter after removing from the oven.
