Easy Soft Pretzel Bites

Ingredients
  

Dough Ingredients
  • 1 cup warm water Not hot, think bath water
  • 2 teaspoons active dry yeast Or instant yeast
  • 1 tablespoon granulated sugar Just a little to wake up the yeast
  • 1 teaspoon salt
  • 2 cups all purpose flour
  • 4 tablespoons butter Melted for brushing, plus extra in the dough for richness
  • 1 tablespoon baking soda For the quick boiling bath
  • 1 large egg Optional for egg wash
  • 1 teaspoon coarse salt Pretzel salt if available, but kosher salt works
Optional Toppings
  • to taste garlic powder
  • to taste everything bagel seasoning
  • to taste cinnamon sugar
  • to taste grated parmesan

Method
 

Preparation
  1. In a large bowl, stir warm water, yeast, and sugar. Let it sit for about 5 minutes until foamy.
  2. Stir in salt and flour, a little at a time, until it looks like a shaggy dough.
  3. Knead the dough for about 5 to 7 minutes until smooth and slightly springy.
Rising
  1. Place the dough in a lightly greased bowl, cover it, and let it rise for about 45 to 60 minutes until doubled.
Shaping
  1. Once the dough has risen, punch it down gently. Roll it into long ropes and cut into bite-size pieces, around 1 inch.
Boiling
  1. Bring a pot of water to a simmer and add baking soda carefully.
  2. Drop pretzel bites in for about 20 to 30 seconds, then lift out with a slotted spoon and place on a parchment lined baking sheet.
Baking
  1. Brush with egg wash (if using), sprinkle with coarse salt, and bake at 425°F until deep golden brown, usually 10 to 14 minutes.
  2. Brush generously with melted butter after removing from the oven.

Notes

Consider variations like garlic parmesan, everything seasoning, or cinnamon sugar for extra flavor. Dips such as warm cheese sauce or honey mustard complement well.
