  • 4 pieces pork chops, about 3/4 inch to 1 inch thick Choose bone-in or boneless as preferred.
  • 1 tsp salt Adjust to taste.
  • 1 tsp black pepper Adjust to taste.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 to 3 tbsp all purpose flour Plus a little extra for dredging if desired.
  • 2 tbsp oil Or a mix of oil and butter.
  • 1 large onion, thinly sliced
  • 2 cups chicken broth or pork broth, low sodium
  • 1/2 cup milk or splash of cream Use cream for a richer gravy.
  • 1 pinch paprika or cayenne Optional.

Method
 

Preparation
  1. Pat the pork chops dry, then season both sides with salt, pepper, garlic powder, and onion powder. Dust lightly with flour if you want a crust.
  2. Heat oil in a skillet over medium to medium-high heat.
Cooking
  1. Sear the chops for about 2 to 3 minutes on each side until golden. Remove to a plate.
  2. Add onions to the skillet. If the pan looks dry, add more oil or butter. Cook until soft and lightly golden, scraping up the browned bits.
  3. Sprinkle in the flour and stir for about 30 seconds, then slowly pour in the chicken or pork broth while stirring.
  4. Let the gravy thicken for a few minutes, then add the milk. Season with pepper and additional salt if needed.
  5. Add the pork chops back into the skillet, spoon gravy over them, and cover. Simmer on low for about 10 to 15 minutes until tender and cooked through.
