  • 12 oz Ground beef (ideally 80/20) Slightly less rich if using 85/15.
  • 8 small Flour tortillas (taco size)
  • to taste Salt Keep it simple.
  • to taste Black pepper
  • 4 slices Cheese (American or shredded) Add for melting.
Toppings
  • Shredded lettuce For classic burger style.
  • Diced onion For classic burger style.
  • Pickles For classic burger style.
  • Jalapenos For spicy variation.
  • Sour cream mixed with lime and salt For spicy and punchy flavor.
  • Tomatoes For fresh topping.
  • Cilantro For fresh topping.
  • Avocado For fresh topping.

Method
 

Preparation
  1. Heat your skillet over medium-high heat until it is properly hot.
  2. Take about 2 to 3 ounces of ground beef per taco and press it onto one side of a tortilla in a thin layer, almost to the edges. Season with salt and pepper.
  3. Place the tortilla beef side down on the hot skillet. Press it firmly for about 10 seconds.
Cooking
  1. Let it cook without moving for about 2 minutes to achieve browning and crispy edges.
  2. Flip the tortilla to toast it on the skillet and add cheese if using. Cook for 1 to 2 minutes until golden and cheese is melted.
  3. Remove and fold like a taco. Repeat with the remaining tortillas.

Notes

Do not overcrowd the pan; cook two at a time for best results. Keep finished tacos warm in a low oven if cooking in batches.
