  • 1 pound small potatoes (baby gold or baby red) These potatoes work best for this recipe.
  • 3 tablespoons olive oil or melted butter Use olive oil for a clean crisp or melted butter for richer flavor.
  • 1 cup Parmesan cheese (finely grated) Sticks best for crispiness.
  • 1 teaspoon salt Add more to taste.
  • 1 teaspoon black pepper Freshly ground for better flavor.
  • 1 teaspoon garlic powder or fresh minced garlic Optional but highly recommended.
  • 2 tablespoons chopped parsley or chives For garnish, optional.

Preparation
  1. Boil the potatoes in salted water until tender, 15-20 minutes.
  2. Drain well and let them sit in the colander to dry for a few minutes.
  3. Preheat oven to 425°F (220°C) and heat the baking sheet if possible.
  4. Place potatoes on the pan and smash each one until about half an inch thick.
  5. Drizzle the smashed potatoes with olive oil, then sprinkle with salt, pepper, and garlic.
Cooking
  1. Roast the potatoes for about 20 minutes, then flip them carefully.
  2. Roast for an additional 10 minutes and sprinkle Parmesan cheese in the last 8-10 minutes.
  3. Finish with a final pinch of salt and garnish with parsley before serving.

Notes

You can make these potatoes ahead of time by boiling them earlier in the day, storing in the fridge, and smashing and roasting just before serving.
