Preparation
- Heat a skillet or griddle over medium-high heat; cast iron is recommended.
- Divide the beef into 6 loose balls.
- Place a tortilla on a plate. Put one beef ball on top and press it into a very thin layer covering most of the tortilla.
- Season the beef side with salt and pepper.
Cooking
- Put the tortilla beef side down in the hot pan. Press it again with a spatula for 10 seconds.
- Cook for about 2 to 3 minutes until the beef is browned and crispy at the edges.
- Flip so the tortilla side hits the pan. Add a slice of cheese on the beef and cook for 1 more minute, covering the pan for extra melt if desired.
- Move to a plate and top with sauce, lettuce, pickles, and onion. Fold like a taco and eat right away.
Notes
Do not overload the toppings for better folding. Serve toppings separately for a build-your-own taco night.
