Easy Smash Burger Tacos

Ingredients
  

For the Tacos
  • 1 pound ground beef (80/20 recommended) Ground chuck for flavor and crisp edges.
  • 6 small flour tortillas Soft taco size.
  • to taste salt For seasoning the beef.
  • to taste pepper For seasoning the beef.
  • 6 slices American cheese or cheddar American cheese melts the smoothest.
  • as needed shredded lettuce For topping.
  • as needed sliced pickles Thin dill pickle chips preferred.
  • as needed diced onion Optional topping.
For the Burger Sauce
  • 1/3 cup mayo
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1-2 tablespoons pickle relish To taste.
  • a pinch garlic powder
  • a pinch paprika

Method
 

Preparation
  1. Heat a skillet or griddle over medium-high heat; cast iron is recommended.
  2. Divide the beef into 6 loose balls.
  3. Place a tortilla on a plate. Put one beef ball on top and press it into a very thin layer covering most of the tortilla.
  4. Season the beef side with salt and pepper.
Cooking
  1. Put the tortilla beef side down in the hot pan. Press it again with a spatula for 10 seconds.
  2. Cook for about 2 to 3 minutes until the beef is browned and crispy at the edges.
  3. Flip so the tortilla side hits the pan. Add a slice of cheese on the beef and cook for 1 more minute, covering the pan for extra melt if desired.
  4. Move to a plate and top with sauce, lettuce, pickles, and onion. Fold like a taco and eat right away.

Notes

Do not overload the toppings for better folding. Serve toppings separately for a build-your-own taco night.
