  • 1 pound large shrimp, peeled and deveined (tail on is optional)
  • 12 ounces smoked sausage (andouille or any smoked sausage)
  • 1 pound baby potatoes or Yukon golds, chopped
  • 2 ears corn on the cob, cut into chunks
  • 2 tablespoons Old Bay seasoning
  • 4 tablespoons butter
  • 3 cloves garlic, minced (fresh or jarred)
  • 1 whole lemon, cut into wedges
  • to taste salt and pepper
  • optional parsley, for garnish for a fresh pop of color

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Prepare the baby potatoes; if they are larger than bite size, cut them into smaller pieces or microwave for a few minutes to par cook.
  3. In a large bowl, combine melted butter, minced garlic, and Old Bay seasoning.
  4. Toss the potatoes and corn in the butter mixture and spread onto a sheet pan.
Cooking
  1. Roast the potatoes and corn in the preheated oven for about 15 minutes.
  2. Add the sausage to the pan and toss everything together, then return to the oven for an additional 10 minutes.
  3. Finally, add the shrimp and cook for another 6 to 9 minutes, until the shrimp are pink and curled.
Serving
  1. Remove the pan from the oven, squeeze fresh lemon juice over the dish, and garnish with parsley if desired.
  2. Serve directly from the pan for a casual dining experience.

Notes

This dish is forgiving; feel free to customize it with your preferred proteins or vegetables. If you're not using Old Bay, try a mixture of paprika, garlic powder, celery salt, cayenne, and black pepper instead.
