Ingredients
  

Seafood
  • 8 oz Small cooked shrimp Thawed if frozen, patted dry.
  • 8 oz Imitation crab Chop into bite-sized pieces.
Vegetables
  • 1 Celery Finely diced for crunch.
  • 1/2 Red onion Finely diced; soak in cold water if too strong.
  • 1/4 cup Fresh dill or parsley Chopped for flavor.
Dressing
  • 1/2 cup Mayonnaise For richness.
  • 1/4 cup Greek yogurt or sour cream To lighten the dressing.
  • 2 tbsp Fresh lemon juice For brightness.
  • 1 tbsp Dijon mustard For a zing.
  • 1 tsp Old Bay seasoning Or other seafood seasoning.
  • 1 tsp Sugar To balance flavors.
  • Salt and pepper To taste Adjust for seasoning.
  • Optional Capers Add for salty pop.

Method
 

Preparation
  1. Thaw and pat dry shrimp if frozen. Chop imitation crab into bite-sized pieces.
  2. Dice celery and red onion finely.
Make the Dressing
  1. In a large bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon, Old Bay, sugar, salt, and pepper until smooth.
  2. Taste and adjust seasoning before adding seafood.
Combine
  1. Gently fold in the seafood, celery, onion, and herbs until well combined.
  2. Cover and chill in the refrigerator for at least 20 minutes before serving.

Notes

Keep seafood salad chilled below 40°F. Serve over greens, as a sandwich, with crackers, or in lettuce cups. It tastes better after resting in the fridge.
