Ingredients
  

For the Sausage Gravy
  • 1 lb Breakfast sausage Pork sausage, either mild or hot.
  • 1/3 cup All-purpose flour This will thicken the gravy.
  • 2 cups Milk Whole milk is recommended for richness.
  • 1 tsp Black pepper Adjust according to preference.
  • to taste Salt Only if needed, as sausage can be salty.
  • a pinch Garlic powder Optional.
  • a pinch Cayenne Optional for heat.
For the Biscuits
  • 8 Biscuits Homemade or store-bought.

Method
 

Prepare the Sausage Gravy
  1. Cook the sausage in a skillet over medium heat, breaking it up as it browns.
  2. When cooked through, do not drain unless there's an extreme amount of grease; keep some fat in the pan.
  3. Sprinkle the flour over the sausage. Stir for about 1 minute to cook the flour slightly.
  4. Slowly pour in the milk while stirring; it may look strange at first but will smooth out.
  5. Continue stirring as it warms up. Once it bubbles, it will thicken.
  6. Add black pepper. Taste before adding salt, as sausage can be salty.
Bake the Biscuits
  1. Bake the biscuits while making the gravy to have everything ready at the same time.
  2. Split open a biscuit and spoon sausage gravy generously on top before serving.

Notes

If the gravy is too thick, add a splash of milk to reach desired consistency. For lumpy gravy, lower heat and whisk, or strain if necessary. The flavor and seasoning can be adjusted as needed.
