Ingredients
  

For the Cocoa
  • 2 cups milk Whole milk is best for that rich feel
  • 1/2 cup heavy cream Or substitute with more milk if you want it lighter
  • 2 tablespoons unsweetened cocoa powder For deep chocolate flavor
  • 2 to 3 tablespoons sugar Adjust to taste
  • 1/3 cup semisweet chocolate chips Or chopped chocolate for a fuller flavor
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt Enhances chocolate flavor
  • 1 pinch cinnamon Optional
  • 1 pinch nutmeg Optional
  • 1 drop peppermint extract Optional

Preparation
  1. Add the milk, cream, cocoa powder, sugar, and salt to a small pot. Whisk it right there in the pot before the heat goes on to help the cocoa blend smoothly.
  2. Warm over medium heat, whisking often. Heat until hot and steamy but not boiling. If bubbling too much, lower the heat.
  3. Add the chocolate chips and continue whisking until they melt, transforming the cocoa into a treat.
  4. Turn off the heat and stir in the vanilla extract. Taste and adjust sweetness with more sugar or chocolate if desired.
  5. Pour into mugs and top with your choice of toppings.

Notes

You can make this cocoa ahead of time and refrigerate. To reheat, warm slowly on the stove and whisk to combine. For dietary options, use dairy-free or lower-sugar substitutes as needed.
