- In a medium pot, add your cooked rice, milk, sugar, cinnamon, and a pinch of salt.
- Set the heat to medium and bring it to a gentle simmer, not a rolling boil.
- Stir often for about 15 to 25 minutes, until it looks creamy and the rice is soft.
- Turn off the heat and stir in vanilla extract. If you want it richer, add a small pat of butter or a splash of cream.
- Let it sit for 5 minutes. It thickens as it cools, so do not panic if it looks a little loose at first.
Notes
Rice pudding stores well in an airtight container in the fridge for 3 to 4 days. Reheat with a splash of milk for desired consistency. Can be served warm or cold.
