  • 10 ounces Mini marshmallows Plus a handful extra for more gooey pockets
  • 6 cups Rice Krispies cereal Adjust based on preferred texture
  • 1 pinch Salt Optional, if using unsalted butter
  • 1 teaspoon Vanilla extract Optional for added flavor

Preparation
  1. Melt butter in a big pot on low heat.
  2. Add marshmallows and stir until they’re mostly melted and smooth.
  3. Turn off the heat, then stir in the Rice Krispies gently.
  4. Fold in the extra handful of marshmallows for creamy bites.
  5. Press the mixture into a buttered pan and let it set.

Notes

Keep the heat low to maintain gooey texture. Avoid packing the mixture too tightly in the pan. Let cool for 30-60 minutes before slicing for clean cuts.
