- Start your rice first. If using brown rice, prepare it before anything else since it takes longer to cook.
- In a pan, warm a little oil, then cook the onion until it softens. Add garlic for about 30 seconds, avoiding browning it.
- Add the black beans, sprinkle in cumin and chili powder, and season with salt and pepper. Warm through, adding a splash of water or broth if it looks dry.
- Taste and adjust the seasoning, adding more salt, cumin, or a pinch of sugar if needed.
- Build your bowl by layering rice, beans, and your desired toppings.
