  • 1 cup rice (white or brown) Cook according to package instructions
  • 1 to 2 cans black beans, drained and rinsed
  • 1 small onion, chopped Or use onion powder if fresh is not available
  • 2 cloves garlic, chopped Or use garlic powder
  • to taste oil or butter for the pan

  • to taste chili powder
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Start your rice first. If using brown rice, prepare it before anything else since it takes longer to cook.
  2. In a pan, warm a little oil, then cook the onion until it softens. Add garlic for about 30 seconds, avoiding browning it.
  3. Add the black beans, sprinkle in cumin and chili powder, and season with salt and pepper. Warm through, adding a splash of water or broth if it looks dry.
  4. Taste and adjust the seasoning, adding more salt, cumin, or a pinch of sugar if needed.
  5. Build your bowl by layering rice, beans, and your desired toppings.

Notes

This recipe is forgiving; feel free to swap ingredients and use what you have on hand. Great for meal prep and can be stored in the fridge for 3-4 days.
